Curried Rice

Ingredients

- 1 tablespoon butter
- 1/3 cup onion, finely chopped
- 1 garlic clove, minced
- 1 tablespoon curry powder
- 1 bay leaf
- salt, to taste
- fresh ground black pepper, to taste
- 1 cup uncooked rice
- 1 1/2 cups chicken broth (low-sodium canned or homemade)
Recipe
- 1 heat butter in a saucepan. add the onion and garlic. cook, stirring, until soft. add the remaining ingredients, except the chicken broth, stirring to coat grains.
- 2 add the chicken broth. cover. bring to a boil. reduce heat. cook 15 to 20 minutes, until rice is tender. remove the bay leaf and serve.
