Corn And Tomato Salad

Ingredients

  • Servings: 10
  • 4 ears corn, kernels sliced from cobs
  • 2 tablespoons sugar
  • 4 tomatoes, sliced into 1/4 in. thick rounds
  • 1 teaspoon coarse salt
  • 1/2 teaspoon ground pepper
  • 3 tablespoons extra virgin olive oil

Recipe

  • 1 bring a large saucepan of water to a boil.
  • 2 add corn and sugar.
  • 3 simmer 1 minute.
  • 4 drain in a colander, and pat dry with paper towels.
  • 5 arrange tomatoes and corn on a serving platter.
  • 6 season with salt and pepper.
  • 7 drizzle with olive oil and serve.
