Ingredients

- 4 ears corn, kernels sliced from cobs
- 2 tablespoons sugar
- 4 tomatoes, sliced into 1/4 in. thick rounds
- 1 teaspoon coarse salt
- 1/2 teaspoon ground pepper
- 3 tablespoons extra virgin olive oil
Recipe
- 1 bring a large saucepan of water to a boil.
- 2 add corn and sugar.
- 3 simmer 1 minute.
- 4 drain in a colander, and pat dry with paper towels.
- 5 arrange tomatoes and corn on a serving platter.
- 6 season with salt and pepper.
- 7 drizzle with olive oil and serve.
