Chicken With Tomatoes & Mushrooms

Ingredients
- Servings: 2
- 2 boneless skinless chicken breasts
- 1 clove garlic, minced or chopped very finely
- 1/2 cup chopped tomato (i used grape tomatoes)
- 1 1/2 cups sliced mushrooms
- 1 cup cooked brown rice
- 1/2 cup shredded cheese (any type)
- seasoning salt, to taste
- cooking spray
Recipe
- 1 pound chicken as thin as you like.
- 2 sprinkle with seasoned salt.
- 3 spray a frying pan with cooking spray (or butter if you want more flavor) and cook chicken about 5 minutes on both sides, until no longer pink in the center.
- 4 meanwhile, spray a small saucepan with cooking spray (or butter) and add garlic.
- 5 cook garlic about 2-3 minutes.
- 6 add mushrooms and tomatoes to garlic, and cook until the mushrooms have softened.
- 7 cook rice according to how you like it.
- 8 lay 1/2 cup rice (each) on 2 dinner plates.
- 9 put chicken on top of rice, and top the chicken with the mushroom/tomato/garlic mixture.
- 10 top that with the shredded cheese.
