Chicken With Tomatoes & Mushrooms

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 2
  • 2 boneless skinless chicken breasts
  • 1 clove garlic, minced or chopped very finely
  • 1/2 cup chopped tomato (i used grape tomatoes)
  • 1 1/2 cups sliced mushrooms
  • 1 cup cooked brown rice
  • 1/2 cup shredded cheese (any type)
  • seasoning salt, to taste
  • cooking spray

Recipe

  • 1 pound chicken as thin as you like.
  • 2 sprinkle with seasoned salt.
  • 3 spray a frying pan with cooking spray (or butter if you want more flavor) and cook chicken about 5 minutes on both sides, until no longer pink in the center.
  • 4 meanwhile, spray a small saucepan with cooking spray (or butter) and add garlic.
  • 5 cook garlic about 2-3 minutes.
  • 6 add mushrooms and tomatoes to garlic, and cook until the mushrooms have softened.
  • 7 cook rice according to how you like it.
  • 8 lay 1/2 cup rice (each) on 2 dinner plates.
  • 9 put chicken on top of rice, and top the chicken with the mushroom/tomato/garlic mixture.
  • 10 top that with the shredded cheese.
