Banana Health Loaf

Total Time: 1 hr Preparation Time: 10 mins Cook Time: 50 mins

Ingredients

  • 1 1/2 cups whole wheat flour
  • 1/2 cup unsweetened dried shredded coconut
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup mashed banana
  • 3 tablespoons vegetable oil
  • 2 tablespoons honey

Recipe

  • 1 mix together flour, coconut, baking powder, baking soda and salt in a bowl.
  • 2 combine banana, oil and honey.
  • 3 stir into flour mixture quickly but gently until just combined.
  • 4 do not overmix (batter will be rough or lumpy and stiff).
  • 5 spread batter evenly in a lightly greased 8 x 4 inch loaf pan.
  • 6 bake in 350 degree oven 45 to 50 minutes until tester inserted in center comes out clean.
  • 7 cool in pan 10 minutes, turn out of pan and cool completely on rack.
  • 8 wrap in waxed paper and store overnight before slicing.
  • 9 if keeping for longer than 2 days, refrigerate.
