Banana Health Loaf

Ingredients
- 1 1/2 cups whole wheat flour
- 1/2 cup unsweetened dried shredded coconut
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup mashed banana
- 3 tablespoons vegetable oil
- 2 tablespoons honey
Recipe
- 1 mix together flour, coconut, baking powder, baking soda and salt in a bowl.
- 2 combine banana, oil and honey.
- 3 stir into flour mixture quickly but gently until just combined.
- 4 do not overmix (batter will be rough or lumpy and stiff).
- 5 spread batter evenly in a lightly greased 8 x 4 inch loaf pan.
- 6 bake in 350 degree oven 45 to 50 minutes until tester inserted in center comes out clean.
- 7 cool in pan 10 minutes, turn out of pan and cool completely on rack.
- 8 wrap in waxed paper and store overnight before slicing.
- 9 if keeping for longer than 2 days, refrigerate.
