Ingredients

- 3 medium carrots, sliced
- 3/4 cup boiling water
- 1 cup apple juice or 1 cup apple cider, chilled
Recipe
- 1 in covered small saucepan, cook carrot in the boiling water about 15 minutes or until very tender; do not drain. cool slightly.
- 2 transfer carrot mixture to blender. add apple juice. cover and blend until smooth. chill before serving.
