Day(s) After Turkey Day Stew

Ingredients

  • Servings: 6
  • 4 medium potatoes, diced
  • 6 carrots, chopped
  • 3 celery ribs, chopped
  • 1 large onion, chopped
  • 2 garlic cloves, minced (or more to taste)
  • 3 beef tomatoes, seeded and diced (canned ok)
  • 1 1/2 teaspoons oil
  • 4 cups chicken broth, unsalted
  • 4 cups cooked turkey, chopped
  • 1/4 teaspoon oregano
  • 1/4 teaspoon sweet basil
  • 1/4 teaspoon thyme, crushed
  • salt and pepper (to taste)
  • turkey stuffing (optional, *)

Recipe

  • 1 heat 11/2 tsp oil in a large saucpot.saute onions til soft; add garlic, carrots and celery. stir-fry for 2-3 minutes.
  • 2 add potatoes, tomatoes and broth to the pot. bring up to a boil, then lower to a simmer for 15 minutes. add turkey and seasonings. cook another 10 minutes.
  • 3 salt and pepper as desired.
  • 4 *i love to put a scoop of stuffing in the middle of bowl before adding stew. it takes the place of serving a bread portion.
