Chicken Paragon (mango Chicken)

Total Time: 4 hrs Preparation Time: 3 hrs Cook Time: 1 hr

Ingredients

  • Servings: 4
  • 1 mango
  • 1 green pepper
  • 1 red pepper
  • 1 onion
  • 1 clove garlic, minced
  • 125 ml plain yogurt
  • 1/4 cup orange juice concentrate
  • 4 boneless chicken breasts
  • 1 cup uncooked rice

Recipe

  • 1 combine orange juice and yogurt.
  • 2 wash chicken and marinate in yogurt mixture.
  • 3 prep time of 3 hours is a guess for minimal marinating time.
  • 4 preferably i would marinate overnight.
  • 5 grill chicken on bbq until thoroughly cooked, braising often with remaining yogurt mixture.
  • 6 chop mango, red& green peppers, and onion into small pieces, combine with minced garlic.
  • 7 when chicken is done, combine mango mixture and remaining yogurt mixture and pour over chicken.
  • 8 cook rice according to package directions.
  • 9 serve rice with chicken.
  • 10 you can use some of the sauce on the rice too if desired.
