Chicken Paragon (mango Chicken)

Ingredients
- Servings: 4
- 1 mango
- 1 green pepper
- 1 red pepper
- 1 onion
- 1 clove garlic, minced
- 125 ml plain yogurt
- 1/4 cup orange juice concentrate
- 4 boneless chicken breasts
- 1 cup uncooked rice
Recipe
- 1 combine orange juice and yogurt.
- 2 wash chicken and marinate in yogurt mixture.
- 3 prep time of 3 hours is a guess for minimal marinating time.
- 4 preferably i would marinate overnight.
- 5 grill chicken on bbq until thoroughly cooked, braising often with remaining yogurt mixture.
- 6 chop mango, red& green peppers, and onion into small pieces, combine with minced garlic.
- 7 when chicken is done, combine mango mixture and remaining yogurt mixture and pour over chicken.
- 8 cook rice according to package directions.
- 9 serve rice with chicken.
- 10 you can use some of the sauce on the rice too if desired.
