Deep Dish Cookie... With Beans!

Total Time: 50 mins Preparation Time: 10 mins Cook Time: 40 mins

Ingredients

  • Servings: 16
  • 2 (15 ounce) cans garbanzo beans, drain and rinse
  • 1 cup quick oats
  • 1/2 cup applesauce
  • 3 tablespoons coconut oil
  • 2 teaspoons vanilla
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/4 cups sugar
  • 1 cup chocolate chips

Recipe

  • 1 combine everything besides chocolate chips ina large food processor until smooth, scape sides as needed. stir in chocolate chips and bake in a greased 10 inch springform pan at 350 for 35-40 mixtures. cool 15 minutes at least before serving.
  • 2 mini chips work, can sub beans for garbanzos. i use coconut sugar with good results. can make sugar free with using 2 cups of soft, pitted dates.
