Ingredients

- 1 vidalia onion, chopped
- 1/2 cup green pepper, diced
- 1 (4 ounce) jar pimientos
- 2 (1 lb) cans creamed corn
- 1 (15 ounce) can hot tamales
- salt and pepper
- 1 cup shredded sharp cheddar cheese
Recipe
- 1 stew onion, pepper and pimentos in juice from tamales.
- 2 add corn, tamales, salt and pepper to sauce mixture.
- 3 bake in casserole dish at 350 degrees f. for 1 hour or until mixture thickens.
- 4 just before serving, top with grated cheese and return to oven until cheese melts.
