Cranberry Orange Nut Bread

Total Time: 1 hr 15 mins Preparation Time: 20 mins Cook Time: 55 mins

Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 3/4 cup orange juice
  • 1 tablespoon grated orange peel
  • 2 tablespoons shortening or 2 tablespoons margarine
  • 1 egg (well-beaten)
  • 1 1/2 cups cranberries (fresh or frozen)
  • 1/2 cup nuts, chopped

Recipe

  • 1 preheat oven to 350.
  • 2 in a large bowl mix together flour, sugar, baking powder, salt and baking soda.
  • 3 in a separate bowl combine beaten egg, orange juice and shortening.
  • 4 add wet ingredients to dry ingredients (you can add more oj if necessary to obtain batter consistency).
  • 5 fold in orange peel, cranberries and nuts.
  • 6 place into a greased 9x5 loaf pan.
  • 7 bake for 55 minutes or until an inserted toothpick comes out clean.
  • 8 cool on a rack for 15 minutes.
