Cranberry Orange Nut Bread

Ingredients
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 1/2 teaspoons baking powder
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 3/4 cup orange juice
- 1 tablespoon grated orange peel
- 2 tablespoons shortening or 2 tablespoons margarine
- 1 egg (well-beaten)
- 1 1/2 cups cranberries (fresh or frozen)
- 1/2 cup nuts, chopped
Recipe
- 1 preheat oven to 350.
- 2 in a large bowl mix together flour, sugar, baking powder, salt and baking soda.
- 3 in a separate bowl combine beaten egg, orange juice and shortening.
- 4 add wet ingredients to dry ingredients (you can add more oj if necessary to obtain batter consistency).
- 5 fold in orange peel, cranberries and nuts.
- 6 place into a greased 9x5 loaf pan.
- 7 bake for 55 minutes or until an inserted toothpick comes out clean.
- 8 cool on a rack for 15 minutes.
