Corn And Butternut Squash Chowder

Ingredients

- 2 tablespoons vegetable oil
- 1 1/2 lbs butternut squash, cut into 1-inch cubes
- 1 medium onion, chopped
- 1 (10 ounce) box frozen corn, thawed
- 1 1/2 teaspoons curry powder
- coarse salt and pepper
- 2 (14 1/2 ounce) cans vegetable broth
- 1/2 cup heavy cream
Recipe
- 1 add squash cubes and onion to hot oil. cook for 6 minutes.
- 2 add corn and curry powder. cook 2 minutes.
- 3 add salt and peppwer to taste.
- 4 add broth. cook 25 minutes.
- 5 remove 1/2 of the soup. blend until smooth. recombine.
- 6 stir in cream and heat through but do not boil.
