Corn And Butternut Squash Chowder

Total Time: 43 mins Preparation Time: 10 mins Cook Time: 33 mins

Ingredients

  • Servings: 4
  • 2 tablespoons vegetable oil
  • 1 1/2 lbs butternut squash, cut into 1-inch cubes
  • 1 medium onion, chopped
  • 1 (10 ounce) box frozen corn, thawed
  • 1 1/2 teaspoons curry powder
  • coarse salt and pepper
  • 2 (14 1/2 ounce) cans vegetable broth
  • 1/2 cup heavy cream

Recipe

  • 1 add squash cubes and onion to hot oil. cook for 6 minutes.
  • 2 add corn and curry powder. cook 2 minutes.
  • 3 add salt and peppwer to taste.
  • 4 add broth. cook 25 minutes.
  • 5 remove 1/2 of the soup. blend until smooth. recombine.
  • 6 stir in cream and heat through but do not boil.
