Curried Rice And Beans

Total Time: 40 mins Preparation Time: 30 mins Cook Time: 10 mins

Ingredients

  • Servings: 5
  • 1 cup brown rice
  • 2 cups chicken broth
  • 1 teaspoon curry powder
  • 1 onion, chopped
  • 2 garlic cloves, chopped
  • 8 ounces firm tofu
  • 15 ounces pink beans
  • 15 ounces whole kernel corn
  • 15 ounces diced tomatoes

Recipe

  • 1 prepare rice with broth and curry separately. saute onion, garlic until soft.
  • 2 add remaining ingredients, add rice. serve.
