Curried Rice With Shrimp

Total Time: 1 hr 5 mins Preparation Time: 20 mins Cook Time: 45 mins

Ingredients

  • Servings: 4
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 carrots, chopped
  • 2 garlic cloves, chopped
  • 2 teaspoons curry powder
  • 1 cup long grain rice
  • 1 1/2 lbs large shrimp, peeled and devained
  • salt and pepper
  • 1/2 cup fresh basil
  • 2 1/2 cups water

Recipe

  • 1 heat oil in a large skillet over medium heat. add onion and carrots and cook, stirring occasionaly until soft,6-8 minutes.
  • 2 add garlic and curry and cook, stirring, until fragrant, 2 minutes.
  • 3 add rice, 2 1/2 cups water ,1/2 teaspoons salt and pepper. bring to a boil.
  • 4 reduce heat to med-low , cover and simmer for 15 minutes.
  • 5 season the shrimp with 1/2 teaspoons salt and 1/4 tsp pepper and nestle them in a partially cooked rice.
  • 6 cover and cook until the shrimp are opaque throughout 4-5 minutes.
  • 7 fold in the basil and serve.
