Curried Rice With Shrimp

Ingredients
- Servings: 4
- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 carrots, chopped
- 2 garlic cloves, chopped
- 2 teaspoons curry powder
- 1 cup long grain rice
- 1 1/2 lbs large shrimp, peeled and devained
- salt and pepper
- 1/2 cup fresh basil
- 2 1/2 cups water
Recipe
- 1 heat oil in a large skillet over medium heat. add onion and carrots and cook, stirring occasionaly until soft,6-8 minutes.
- 2 add garlic and curry and cook, stirring, until fragrant, 2 minutes.
- 3 add rice, 2 1/2 cups water ,1/2 teaspoons salt and pepper. bring to a boil.
- 4 reduce heat to med-low , cover and simmer for 15 minutes.
- 5 season the shrimp with 1/2 teaspoons salt and 1/4 tsp pepper and nestle them in a partially cooked rice.
- 6 cover and cook until the shrimp are opaque throughout 4-5 minutes.
- 7 fold in the basil and serve.
