Banana Nut Muffins

Ingredients
- 2 1/3 cups whole wheat pastry flour
- 1/3 cup sugar
- 1 1/2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 bananas
- 2 jumbo eggs
- 2/3 cup low-fat milk
- 2/3 cup applesauce
- 1/2 cup walnuts, chopped
Recipe
- 1 preheat oven to 350 degrees. spray muffin tins with nonstick spray. if using papers, spray the inside of the papers and top of muffin pan with nonstick spray.
- 2 using a fork, mix dry ingredients in a large bowl.
- 3 mash the bananas and add the eggs, milk and applesauce, mixing well.
- 4 add the wet ingredients to the dry ingredients and mix.
- 5 fold in the walnuts.
- 6 pour batter into prepared muffin tin. bake for approximately 20 minutes or until golden brown and a toothpick inserted into the center of a muffin comes out clean.
