Banana Nut Muffins

Total Time: 30 mins Preparation Time: 5 mins Cook Time: 25 mins

Ingredients

  • 2 1/3 cups whole wheat pastry flour
  • 1/3 cup sugar
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 bananas
  • 2 jumbo eggs
  • 2/3 cup low-fat milk
  • 2/3 cup applesauce
  • 1/2 cup walnuts, chopped

Recipe

  • 1 preheat oven to 350 degrees. spray muffin tins with nonstick spray. if using papers, spray the inside of the papers and top of muffin pan with nonstick spray.
  • 2 using a fork, mix dry ingredients in a large bowl.
  • 3 mash the bananas and add the eggs, milk and applesauce, mixing well.
  • 4 add the wet ingredients to the dry ingredients and mix.
  • 5 fold in the walnuts.
  • 6 pour batter into prepared muffin tin. bake for approximately 20 minutes or until golden brown and a toothpick inserted into the center of a muffin comes out clean.
