Curried Rice With Raisins, Apricots And Almonds

Total Time: 48 mins Preparation Time: 20 mins Cook Time: 28 mins

Ingredients

  • Servings: 8
  • 1 medium onion, finely chopped
  • 3 cloves garlic, finely chopped
  • 3 tablespoons olive oil
  • 7 teaspoons curry powder
  • 2 cups long grain rice
  • 3 1/4 cups chicken broth
  • 1 teaspoon salt
  • 3/4 cup raisins
  • 2/3 cup slivered almonds, toasted
  • 1/2 cup chopped dried apricot

Recipe

  • 1 in a large saucepan, cook onion and garlic in oil over moderately low heat, stirring, until softened.
  • 2 add curry powder and rice and cook,stirring, for 1 minute.
  • 3 add chicken broth and salt.
  • 4 boil, uncovered, without stirring, until surface of rice is covered with steam holes and grains on top appear to be dry, about 8 minutes.
