Cantaloupe And Chicken Salad

Ingredients

  • Servings: 6
  • 1/4 cup plain yogurt
  • 1/4 cup mayonnaise or 1/4 cup salad dressing
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh chives, chopped
  • 1/4 teaspoon salt
  • 5 cups cantaloupe, cut into 1 1/2 inch pieces
  • 2 1/2 cups cooked chicken, cut up
  • 1 cup seedless grapes, cut in 1/2
  • 1 medium cucumber, chunked

Recipe

  • 1 mix yogurt and mayonnaise in a large bowl.
  • 2 stir in lemon juice, chives and salt.
  • 3 fold in remaining ingredients.
  • 4 serve immediately or chill to serve later.
  • 5 do not chill longer than 24 hours or it will get watery and separate!
