Banana Bread (no Added Fat)

Total Time: 1 hr 10 mins Preparation Time: 10 mins Cook Time: 1 hr

Ingredients

  • 3 over-ripe bananas, well mashed
  • 2 eggs, beaten until light
  • 2 cups flour
  • 3/4 cup sugar
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 cup nutmeats, coarsely chopped (optional)

Recipe

  • 1 preheat oven to 350 fahrenheit.
  • 2 mix the bananas and eggs in a bowl (a stand mixer is easiest, but by hand is fine, just make sure you mix them very well).
  • 3 sift together the dry ingredients (flour though soda), then add the dry mixture to the wet banana mixture. stir in nuts if desired.
  • 4 bake in buttered 9 x 5 inch loaf pan one hour (mini loaf pans take 45 minutes).
