Brown Sugar Oat Muffins

Ingredients

  • Servings: 12
  • 1 cup old fashioned oats
  • 1 cup whole wheat flour
  • 3/4 cup packed brown sugar
  • 1/2 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 eggs
  • 3/4 cup 2% low-fat milk
  • 1/4 cup canola oil
  • 1 teaspoon vanilla extract

Recipe

  • 1 in a small bowl, combine the first six ingredients. in another small bowl, beat the eggs, milk, oil and vanilla. stir into the dry ingredients just until moistened.
  • 2 fill greased or paper-lined muffin cups two-thirds full. bake at 400° for 15-17 minutes or until a toothpick inserted near the center comes out clean. cool for 5 minutes before removing from pan to a wire rack. serve warm.
