Confetti Beet Salad

Total Time: 2 hrs 5 mins Preparation Time: 5 mins Cook Time: 2 hrs

Ingredients

  • Servings: 4
  • 6 -8 small beets, cooked,peeled and finely chopped
  • 2 cups canned corn, drained
  • 1 red pepper, chopped
  • 1 small onion, finely chopped
  • 3 -4 tablespoons chopped fresh coriander or 3 -4 tablespoons parsley
  • 3 tablespoons olive oil
  • 3 tablespoons red wine vinegar

Recipe

  • 1 mix all the ingredients together in a bowl.
  • 2 season with salt and pepper to taste.
  • 3 chill for at least two hours before serving, garnished with a little extra parsley or coriander if you have it on hand.
